Welcome Summer with The Peach Truck: Delicious Southern Peach Recipes

As the days grow longer and the warmth of summer envelops us, there's no better way to celebrate the season than with the delightful taste of fresh peaches straight from the South. We're thrilled to announce that The Peach Truck will be joining us at our New Albany location, bringing the juiciest, most flavorful peaches right to you! To kick off this peach-filled celebration, we're sharing a recipe journal featuring an array of mouth-watering peach recipes from The Peach Truck

Peach & Prosciutto Pizza

If you’re feeling adventurous, you can make your pizza dough from scratch, but these days many grocery stores stock fresh pizza dough that you can purchase. With just a few simple steps, you’ll have this deliciously sweet and savory pizza flatbread. Perfectly paired with a salad for a light meal, it can also be cooled to room temperature and cut into smaller pieces for a tasty summer appetizer.

WHAT YOU'LL NEED
1 lb prepared pizza crust
6 oz fresh mozzarella cheese
2 T olive oil
½ cup ricotta
½ teaspoon salt
fresh pepper
4 oz shaved prosciutto
1-2 peaches

Preheat oven to 375 degrees. Spread your pizza crust on an oiled pan or pizza stone. Mix together the ricotta, olive oil, salt and pepper and spread evenly on the surface of the prepared pizza dough. Wash, pit and thinly slice the peaches. Evenly space the peach slices on the pizza. Tear pieces of the prosciutto and place around the peach slices. Slice the mozzarella and place bits of cheese evenly across the surface of the pizza. Place in the center rack of the oven and bake for 10-15 minutes, or until the crust is browned.

 

Charred Peach Margarita

WHAT YOU'LL NEED
1 tsp. canola oil
1 large peach, pitted, cut into 6 wedges
3 Tbsp. lime juice
3 oz. tequila
2 oz. Cointreau
1 Tbsp. agave nectar
Kosher salt
Lime wedges, for garnish

1. Heat a grill or grill pan over medium high heat. Brush peach wedges with oil and grill 30-60 seconds or until charred. Remove from grill and cool completely.

2. Set aside 2 peach wedges for garnish. Place remaining peach wedges and lime juice in a cocktail shaker; muddle to crush peaches. Add tequila, Cointreau, and agave. Top off shaker with ice; cover and shake 30 seconds or until chilled.

3. Rub rims of two glasses with remaining peach wedges; dip rims in salt. Fill glasses with ice; strain margarita into the glasses. Add peach wedges and lime wedges to drinks for garnish. Serve immediately.

No-Bake Peach Pie


Recipe by The Peach Truck

INGREDIENTS 
1 10-inch prepared graham cracker pie crust 
1 3-ounce package peach-flavored gelatin  
¼ cup granulated sugar 
zest of one lemon 
1 cup boiling water 
7 peaches 
whipped cream, optional 


In small mixing bowl, add the peach-flavored gelatin, sugar and lemon zest. Add boiling water and stir until sugar and gelatin are dissolved. Set mixture aside to cool to room temperature. 


While the gelatin mixture is cooling, prepare your peaches. Start by peeling the peaches. Bring medium saucepan of water to a boil and prepare a bowl of ice water. Using the tip of a paring knife, make a small X through the skin on the bottom of the peach, taking care to not cut deep into the flesh. Using a slotted spoon, place the peach in the boiling water for 10-15 seconds before removing it placing it in the bowl of ice water. Once cool, the skill will easily peel way with a paring knife by starting at the corners of the X and peeling towards the stem.  

Once all the peaches are peeled, remove the pit, cut into thin slices and place in a large mixing bowl. Pour the cooled gelatin mixture on the peaches, toss to combine fully and transfer to the prepared pie crust. Arrange the peaches to evenly fill the crust if needed, cover with plastic wrap and refrigerate for 2-3 hours until fully set. 

Slice with a sharp knife dipped in hot water and serve with a dollop of whipped cream if desired.
